Course Overview

This course is designed for anyone working in the hospitality sector who is responsible for creating rosters, scheduling team members, or forecasting and managing labour resources and budgets. This includes Supervisors, Managers, Heads of Department, Finance Managers, HR Managers, and General Managers.

Participants will learn that labour forecasting is fundamentally different from revenue forecasting. Effective labour planning requires volume-based data—such as occupied rooms, covers, and check-ins—rather than revenue alone, to create accurate schedules and efficient rotas.

Using their own business data collected in advance, learners will take part in a hands-on, practical workshop focused on finding the right balance between service quality and labour efficiency. The course introduces a more effective approach to payroll management using the productivity metric “hours per unit.”

By the end of the workshop, learners will be able to:

  • Explain the benefits of managing labour using productivity metrics rather than labour cost as a percentage of revenue

  • Identify the key data types and sources needed to build accurate labour schedules

  • Calculate labour forecasts based on volume drivers (e.g. occupied rooms, covers, check-ins)

  • Establish a productivity baseline for their department and create schedules that reflect forecasted demand and team availability

  • Analyse labour performance and identify opportunities for improvement
